Hello hello GIRLS! Justine here! I was just out ALL DAY at the Women’s March in NYC!!!! It was such an amazing feeling to be out there surrounded by LOVE and SUPPORT and a whole MESS of BADA$$ WOMEN! Since I was out ALL DAY I need to E A T! SO I’m making something real savory, how does Rosemary Lemon Chicken PANCAKES sound?! WEIRD?! LOL maybe but they are super delicious!

The pancakes are actually called Blinchiki, and they are a Russian Dish! I’m not sure where pancakes originated from, and I came up with this filling myself, but that word “blinchiki” don’t you LOVE it? So, these are Justine’s Blinchiki, with Rosemary Lemon Chicken filling. YUMMIES!!!! Enjoy girls! And of course… don’t feel like the savory pancakes? Just bake those pancakes and eat them with sugar or jam or Nutella or sugar and lemon WHATEVES!

Pancakes

  • 4 medium eggs
  • 2 ½ cups flour
  • 3 cups milk
  • 1 stick of butter, melted
  • ½ teaspoon salt

 

Mix all the ingredients, and put in the refrigerator for about 1 hour. Then stir the batter and heat a bit of butter or oil in a pan and start baking the pancakes. If the batter is too thin, add some flour. If it’s too thick, add some water or milk.

Filling

  • 5 cups of pulled chicken
  • Oil or butter to bake in
  • 2 cloves of garlic, finely chopped
  • A pinch of chili powder
  • A bit of lemon zest
  • A bit of rosemary, finely chopped
  • Salt and pepper
  • Sour cream, to serve with the crepes

Heat the oil or butter in a pan, add the garlic and rosemary and let them release their flavors. Don’t put the heat too high or the garlic will BURN and that STINKS, trust me girls, hahah I tried ;)! Then add the chicken, lemon zest, chili powder and salt and pepper to taste. Stir it and heat it. Turn off the heat and scoop 1-2 tablespoons (depending on the size of your pancake) onto a pancake. Fold them up! I made squares, but you can also make them rectangles or even in a cone shape, whatever you like GIRLS!

Serve with some sour cream and ENJOY!!! 🙂 PERF for rooting for Miss Russia during Miss Universe, RIGHT?! YAAS!
