Thanksgiving!!

Justine here๐Ÿ˜! Obvi I am MAD excited for Thanksgiving this week! Itโ€™s the PERFECT Holiday because itโ€™s all about the FOOD๐Ÿ™Œ๐Ÿ™Œ๐Ÿ™Œ! You all know how I LURV to experiment in the kitchen, well this year I took a Thanksgiving CLASSIC and put my own little twist on it! Pecan Pie BITES! All the gooey nutty sweetness you love in a cute little bite!!!

Youโ€™ll need:

  • Mini muffin tin, greased lightly
  • Parchment paper (cut into strips that fit the mini muffin tin holes and overlap a little bit)

For the crust:

  • 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces

For the Caramel-Pecan Ooey-goeey goodness๐Ÿ˜œ:

  • 2 ยฝ cups coarsely chopped pecans (or you can also use walnuts or other nuts you like!)
  • 1 and a 1/2 sticks unsalted butter
  • 3/4 cup light brown sugar
  • 3 tablespoons of runny honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • A little bit (2-3 tablespoons) of heavy whipping cream

How-to:

1) Grease your mini muffin tin lightly and line all holes with a little stroke of parchment paper. This makes it easier to lift your pecan pie bites out of the tin later.

2) Mix flour, cornstarch, sugar and salt together, then add the cold butter and mix until you have a nice dough that sticks together. You can do this by hand or with a mixer. First itโ€™ll be all bits and pieces but then itโ€™ll come to a nice dough. If itโ€™s too dry, add some butter, if itโ€™s too soft add some flour.

3) Put little marble sized pieces of dough in each muffin tin hole. This should fill up the muffin hole just below the middle.

4) Place in the fridge for about 15 minutes. Heat up the oven to 350 degrees.

5) Pull your dough out of the fridge and place the muffin tin in the oven, for about 12-15 minutes. Keep an eye on them so they donโ€™t burn!

6) Now you have time for the caramel-nutty goodness: in a heavy saucepan combine honey, sugar, butter, vanilla and salt, let it melt, while stirring THE ENTIRE time with a wooden spoon (REALLY, you donโ€™t want burned caramel!), when all is mixed, turn up the heat slightly and let it boil gently for about 4 minutes. Add the heavy whipping cream (CAREFUL, this might splatter a lot! I had my Dad help me pour!) and the pecans. Keep stirring for another few minutes, turn off the heat.

7) After theyโ€™re done, scoop in the caramel nutty mixture using 2 small spoons. Scoop them as full as you like ๐Ÿ™‚ but donโ€™t let it overflow the tin!

8) Refrigerate for 20 minutes and then lift them out of the muffin tin. Serve as they are or with a scoop of vanilla ice creamโ€ฆ YUMMY!! ๐Ÿ™Œ
