Hi GURLSSS! Justine here! Are you ready for some baking? As you know I really LURV spending time coming up with new recipes. Today, it’s a kind of old-fashioned cookie recipe, BUT it’s one that’s absolute PERFECTION! It’s scoopy dough that turns into SUPERB chewy cookies that are sweet and a bit tangy. AMAZE that feel in your mouth of cookies that are perfectly chewy! So let’s go with this SUGARRUSH recipe! I promise, next time it won’t involve so much sugar, hahahaha 😉
Lemon Sugar Cookies
- 1 1/2 cups sugar, plus a bit more for dipping
- 1 egg
- 1 teaspoon vanilla extract
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1/2 cup (1 stick) softened butter
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- Optional: sprinkles for dipping
Preheat the oven to 350°F and line a baking sheet with parchment paper. Mix together the sugar and the butter until well combined. Stir in the egg, vanilla extract, lemon juice & zest until well combined. Whisk together the flour, baking powder, cinnamon and salt and then combine with the liquid ingredients until a soft dough is formed.
If it’s too soft, chill for 10-15 minutes. Pour sugar or sprinkles in a bowl and roll the dough into tablespoon-sized balls.
Roll each ball into the sugar or sprinkles and then place on the sheet a few inches apart, as they’ll spread as they bake.
Bake one sheet at a time for 10-12 minutes, or until the edges are just set. Let the puffy cookies cool down: they’ll flatten and those amaze cracks in the surface will form! Continue for the rest of the dough andddddd ENJOYYYYY!!!! SUGAR RUSSSHHHHH! 😉
