Buonasera signore! Justine here 😀 I’m feeling UBER Italian RN on this lazy Sunday evening 😉 SOOO as you probs know, my StelloGirls Alissa and Shachi have been ROCKING it at the Tribeca Film Festival. They’ve been running around like CRAY CRAY for the past week and I’m SO proud of them –SO I thought, why not whip them up a FAB lunch before they hit the road!?! I love spoiling my GURLZ <3

I picked out all these PERF ingredients to make an Asian-themed lunch. I’m REALLY into Asian cuisine RN <3 I laid out all the ingredients on the counter & checked my watch: 9:04 a.m. NIIIIIICE. The girls told me they’d stop by around 1 … meaning I had PLENTY of time, maybe I’d EVEN get to sneak in an episode of Broad City between cooking the meat and frying the rice 😉

WELLLLL … that WAS the plan but then I totally dozed off around 9:30 a.m. -waiting for the meat to defrost! I woke up on my couch, with my cat Bernie snoring next to me likeeeeee….. 30 MIN before the girls arrived!! I was like AHHHH! WHA-HA-HAPPENED!?! I needed to make something DEF delish and UBER quick.

So I raided my fridge and found some useful items. Mozzarella cheese … tomatoes … if I could only get some … YAS! -I found some Basil hiding underneath an old sandwich 😉 … and BOOM we got ourselves some PIZZZAAA. Oh yasssssss.

This DIY is SUPER easy and pretty versatile – you can make a pizza OR a salad …. shout-out to all the gluten-free peeps out there 🙂 The StelloGirls TOTALLY loved the mini pizzas and thought I spent the morning making them 😀 … little do they know 😉 . Well I guess they MIGHT be reading this … so … SORRY GALS–it was a last minute deal, but made with LOTS of LURV <3

Sooooo what do you need?

  •  Cherry tomatoes
  •  Mozzarella cheese
  •  Olive Oil
  • Fresh basil
  •  Grated grana padano cheese (if you’re not in a time crunch ;))
  •  Some salt & pepper
  •  Any kind of pizza dough, sliced bread, pita, flat bread – pretty much whatever your heart desires. (I used ready-made pizza dough b/c of my time ISSUESSSSS)

Here’s the deal:
Pre-heat your oven to 390 degrees F. Cut the tomatoes in halves && cut the mozzarella into slices too. Place them on the bread/pizza dough of your choice. Sprinkle with olive oil and pop into the oven for about 10 minutes -keep a close eye on them thangs -so they won’t burn! (You should adjust the baking temp and time depending on the dough/bread you’re using -but if you use ready-made pizza dough this should be good!) Once out of the oven, sprinkle with fresh basil, pepper, salt and a little bit of coarsely-grated grana padano cheese! MAJOR YUMMM!!! ENJOY <3
